  • 4 boneless, skinless chicken breasts (about 1.5 lbs / 680 g)
  • 2 tablespoons extra virgin olive oil
  • 4 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, chopped (packed in oil)
  • 3 cups fresh baby spinach (about 90 g)
  • 1 cup heavy cream (240 ml) or half-and-half for lighter option
  • 1/2 cup chicken broth (120 ml), homemade or low sodium
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon Italian seasoning (oregano, basil, thyme blend)
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt, pepper, and Italian seasoning.
  2. Heat olive oil over medium-high heat in a large skillet. Add chicken breasts and cook 5-6 minutes per side until golden brown and cooked through (internal temp 165°F / 74°C). Remove and set aside.
  3. Lower heat to medium. Add minced garlic and sun-dried tomatoes to the pan and stir for 1-2 minutes until fragrant.
  4. Add fresh spinach and stir until just wilted, about 1-2 minutes.
  5. Pour in chicken broth and heavy cream. Stir gently, scraping up browned bits. Simmer gently for 3-4 minutes until sauce thickens.
  6. Stir in grated Parmesan cheese and optional red pepper flakes until cheese melts and sauce is smooth. Adjust salt and pepper to taste.
  7. Return chicken to the pan, nestle into the sauce, spoon sauce over top. Cover and simmer on low for 3-5 minutes to heat through and marry flavors.
  8. Serve hot, optionally with garlic bread, mashed potatoes, polenta, or pasta.

Notes

Do not overcrowd the pan when browning chicken to ensure proper searing. Keep sauce simmer gentle to avoid curdling. Adjust sauce thickness by adding broth or simmering longer uncovered. Let chicken rest in sauce after cooking to keep it juicy. For dairy-free, substitute cream with coconut cream and Parmesan with vegan cheese or nutritional yeast.
