  • 1 pound (450 g) ground beef (80/20 preferred)
  • 8 ounces (225 g) wide egg noodles
  • 8 ounces (225 g) cremini mushrooms, sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 cups (720 ml) beef broth (low sodium recommended)
  • 1 cup (240 ml) sour cream (full fat preferred)
  • 1 tablespoon Dijon mustard
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add ground beef and cook for 5-7 minutes, breaking it up, until browned with no pink remaining. Season lightly with salt and pepper. Drain excess fat if desired.
  2. Push beef to one side of the pan. Add remaining 1 tablespoon butter, diced onion, and sliced mushrooms to the empty side. Cook for about 5 minutes until onions are translucent and mushrooms start to brown. Stir in minced garlic during the last minute.
  3. Sprinkle 2 tablespoons of all-purpose flour evenly over the beef and mushroom mixture. Stir constantly for 1-2 minutes to cook out the raw flour taste and thicken the sauce.
  4. Gradually add 3 cups beef broth while stirring to avoid lumps. Bring to a gentle boil, then reduce heat to low. Add egg noodles directly into the pan, submerging them as best as possible. Cover with lid and simmer for 10-12 minutes, stirring occasionally to prevent sticking.
  5. Remove pan from heat once noodles are tender and sauce has thickened. Stir in sour cream and Dijon mustard until smooth and creamy. Adjust salt and pepper to taste.
  6. Garnish with chopped fresh parsley and serve hot straight from the skillet.

Notes

If sauce is too thick after adding sour cream, stir in a splash of broth or water to loosen. If too thin, simmer uncovered a few minutes to reduce. Add sour cream off heat to prevent curdling. Let sour cream come to room temperature before adding for smoother blending. Avoid over-stirring noodles to prevent breaking.
