Instructions

  1. Pat the chicken pieces dry with paper towels. Season with salt, pepper, and half of the Italian seasoning.
  2. Heat 1 tablespoon olive oil in a large deep skillet over medium-high heat. Add chicken in a single layer and cook for 4-5 minutes until golden brown on one side.
  3. Flip chicken and cook another 3 minutes until fully cooked but still juicy. Remove chicken and set aside.
  4. Reduce heat to medium and add remaining 1 tablespoon olive oil. Add minced garlic and sauté for 30-45 seconds until fragrant but not browned.
  5. Add uncooked pasta, chicken broth, and half-and-half to the skillet. Stir gently to combine, ensuring pasta is submerged.
  6. Bring mixture to a gentle boil, then reduce heat to a simmer. Cover pan with lid slightly ajar to prevent boiling over.
  7. Simmer for 12-15 minutes, stirring every 5 minutes to prevent sticking, until pasta is tender but not mushy. Add more broth or water if needed.
  8. Stir in cooked chicken pieces and Parmesan cheese until cheese melts into a creamy sauce.
  9. Adjust seasoning with salt, pepper, and remaining Italian seasoning to taste.
  10. Garnish with chopped fresh parsley and serve immediately while warm and creamy.
