  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon maple syrup or honey (optional)
  • 1 pinch flaky sea salt
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. In a mason jar or small bowl, mash half a ripe banana with a fork until mostly smooth.
  2. Add 2 tablespoons of creamy peanut butter and stir into the mashed banana until combined.
  3. Pour in 1/3 cup of milk and stir until the banana-peanut butter mixture is fully incorporated.
  4. Add 1/2 cup of rolled oats and stir well, ensuring all oats are submerged. If using chia seeds, add 1 tablespoon now and stir again.
  5. Add a tiny pinch of salt and 1/2 teaspoon of vanilla extract (if using). Stir one final time.
  6. Seal the jar and refrigerate for at least 4 hours, preferably overnight (8 hours is ideal).
  7. In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, and optional toppings like chopped peanuts or cinnamon.

Notes
