  • 1 cup (90g) rolled oats
  • 1 large very ripe banana
  • 1/4 cup (64g) creamy peanut butter
  • 1 cup (240ml) milk (2% dairy or any milk)
  • 1/4 cup (60g) plain Greek yogurt
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1 pinch salt
  • 1/2 teaspoon vanilla extract

Instructions

  1. Mash the banana in a medium mixing bowl until mostly smooth with a few tiny lumps.
  2. Add peanut butter (warm slightly if cold) and stir into mashed banana until fully combined into a thick paste.
  3. Pour in milk and Greek yogurt, whisk until smooth and uniform in color.
  4. Add maple syrup or honey (if using), vanilla extract, and salt. Whisk again. Taste and adjust sweetness.
  5. Stir in rolled oats and chia seeds (if using) until every oat is coated. Mixture will be liquidy.
  6. Divide mixture evenly into two 16-ounce jars or airtight containers, leaving about an inch of space at the top.
  7. Seal jars tightly and refrigerate for at least 6 hours, ideally 8-12 hours (up to 48 hours).
  8. In the morning, stir oats. Serve cold or microwave for 45-60 seconds for warm oats. Add toppings as desired.

Notes

Mash banana thoroughly for creamiest texture. Warm peanut butter for easier mixing. Use rolled oats, not quick or steel-cut. Oats will thicken overnight; add splash of milk if too thick. Store up to 5 days in fridge. Freeze up to 3 months.
