Instructions

  1. Mash 1 medium ripe banana thoroughly with a fork until mostly smooth, leaving a few small chunks for texture.
  2. Add 2 tablespoons natural peanut butter and 1 teaspoon honey or maple syrup (if using) to the mashed banana. Stir vigorously to combine into a smooth paste.
  3. Pour in 1/2 cup (120 ml) milk and 1/4 cup (60 g) Greek yogurt. Stir to combine all wet ingredients evenly with the peanut butter banana mixture.
  4. Add 1/2 cup (45 g) rolled oats, 1 tablespoon (12 g) chia seeds, 1/2 teaspoon vanilla extract, and a pinch of salt. Stir well to incorporate everything.
  5. Cover the bowl or jar tightly and refrigerate for at least 6 hours or overnight to let the oats soak and soften.
  6. The next morning, stir the oats. If too thick, add a splash of milk to loosen. Top with banana slices, nuts, or cinnamon if desired and serve.
