  • 8 oz (225 g) cream cheese, softened
  • 34 garlic cloves, minced
  • 1/2 cup (75 g) sun-dried tomatoes, chopped
  • 2 cups (60 g) fresh spinach
  • 1 tsp Italian seasoning or a handful of fresh basil (optional)
  • Salt and pepper to taste

Instructions

  1. Pat chicken breasts dry and season with salt and pepper.
  2. Place chicken breasts in the bottom of a 6-quart slow cooker.
  3. Sprinkle minced garlic, chopped sun-dried tomatoes, and Italian seasoning (if using) evenly over the chicken.
  4. Cut softened cream cheese into chunks and scatter over the top of the chicken and other ingredients.
  5. Cover and cook on LOW for 4 to 5 hours or on HIGH for 2 to 3 hours until chicken reaches 165°F (74°C) and is tender enough to shred.
  6. About 15 minutes before serving, stir in fresh spinach, cover, and cook until wilted.
  7. Taste and adjust seasoning with salt and pepper; optionally stir in fresh basil before serving.
  8. Serve over pasta, rice, mashed potatoes, or low-carb alternatives.

Notes

If cream cheese is not soft, microwave for 15-20 seconds to soften. For thicker sauce, remove chicken after cooking and simmer sauce on HIGH for 10 minutes with lid off before adding spinach. Soak dry sun-dried tomatoes in warm water before chopping to enhance flavor. Add spinach only in last 15 minutes to avoid mushiness. Can substitute cream cheese with full-fat coconut cream for dairy-free version. Leftovers keep 3 days refrigerated or 2 months frozen.
