  • For the Creamy Ranch Dip:
  • ½ cup (120g) mayonnaise (full-fat)
  • ¼ cup (60g) sour cream or Greek yogurt
  • 1 teaspoon dried dill
  • 1 teaspoon dried parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • 1 tablespoon lemon juice
  • Salt and black pepper to taste

Instructions

  1. Rinse and cut 1 medium head of cauliflower into bite-sized florets, about 1½ inches each. Pat dry with a kitchen towel to remove excess moisture.
  2. In a medium bowl, whisk together ½ cup all-purpose flour, ½ cup water, 1 teaspoon garlic powder, 1 teaspoon paprika, and ½ teaspoon salt until smooth with no lumps. The batter should be thick enough to coat the cauliflower but still drip slightly.
  3. Toss the cauliflower florets in the batter, ensuring each piece is evenly coated. Shake off excess batter gently.
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes. Lightly spray the basket with oil.
  5. Place cauliflower in a single layer in the air fryer basket (cook in batches if needed) and air fry for 12 minutes, flipping halfway through for even crisping. The bites should be golden and crispy outside, tender inside.
  6. While cauliflower cooks, mix ½ cup hot sauce with 1 tablespoon olive or avocado oil in a bowl.
  7. Once cauliflower bites are done, immediately toss them in the buffalo sauce until well coated.
  8. To make the ranch dip, combine ½ cup mayonnaise, ¼ cup sour cream or Greek yogurt, 1 teaspoon dried dill, 1 teaspoon dried parsley, ½ teaspoon garlic powder, ½ teaspoon onion powder, 1 tablespoon lemon juice, and salt and pepper to taste. Stir until smooth and refrigerate until serving.
