Ingredients

Scale
  • 2 lbs chicken wings (drumettes and flats, separated)
  • 1 tbsp baking powder
  • 1 tbsp cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper (optional)
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup sour cream
  • 1/2 cup buttermilk
  • 1/4 cup mayonnaise
  • 1 tsp dried dill
  • 1 tsp dried parsley
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp fresh chives (optional)

Instructions

  1. Pat the wings dry with paper towels.
  2. In a large bowl, combine baking powder, cornstarch, garlic powder, onion powder, smoked paprika, cayenne (if using), salt, and pepper.
  3. Add dried wings to the bowl, drizzle with olive oil, and toss until evenly coated.
  4. Preheat air fryer to 380°F (193°C) for 3-5 minutes.
  5. Arrange wings in a single layer in the air fryer basket, working in batches if needed.
  6. Cook for 12 minutes, flipping halfway through.
  7. Increase temperature to 400°F (204°C) and cook for another 5-8 minutes until golden and crispy.
  8. Check internal temperature reaches 165°F (74°C).
  9. While wings cook, combine all ranch ingredients in a small bowl and whisk until smooth. Refrigerate until ready to serve.
  10. Let wings rest for 2-3 minutes, then serve immediately with ranch dip.

Notes

For extra crispiness, ensure wings are thoroughly dried before coating. Do not overcrowd the air fryer basket. Baking powder is essential for crispy skin; do not substitute with baking soda. Leftover wings can be reheated in the air fryer at 350°F for 3-4 minutes.
