Instructions

  1. Cook the bacon: Heat skillet over medium heat. Lay 4 slices of bacon flat without overlapping. Cook 4-5 minutes per side until desired crispness. Remove and drain on paper towels. Keep some bacon grease in pan for eggs.
  2. Prepare the eggs: For fried eggs, crack each egg into skillet and cook until whites set but yolks slightly runny (about 3 minutes). For scrambled, whisk eggs with salt and pepper, pour into skillet, and stir gently until softly set (2-3 minutes).
  3. Toast the bagels: Spread butter on cut sides of bagel halves. Place cut-side down in skillet or toaster oven until golden and crispy, about 2-3 minutes. Watch closely to avoid burning.
  4. Assemble the sandwich: Spread mayonnaise and Dijon mustard on toasted bagel bottoms if using. Layer cheddar cheese slice, cooked eggs, then bacon. Top with bagel tops.
  5. Optional final toast: Place assembled sandwich under broiler for 1-2 minutes for extra melty cheese. Watch carefully to prevent burning.
