  • 1 cup panko breadcrumbs

  • Zest of 1 lemon
  • 1 tablespoon olive oil
  • For garlic herb butter: 4 tablespoons unsalted butter, softened; 2 cloves garlic, minced; 1 tablespoon fresh parsley, chopped; pinch of salt

Instructions

  1. Preheat oven to 400°F (200°C). Position rack in the middle. Line a baking sheet with parchment paper and place a wire rack on top if available. Spray rack lightly with cooking spray.
  2. Pat pork chops completely dry with paper towels. Let them sit at room temperature for about 10 minutes.
  3. Set up three shallow bowls: In the first, combine flour, salt, pepper, garlic powder, and smoked paprika. In the second, pour melted butter. In the third, combine panko breadcrumbs with minced garlic, chopped parsley, thyme, and lemon zest.
  4. Coat each pork chop: dredge in seasoned flour, shake off excess; dip in melted butter, let excess drip; press into herb breadcrumb mixture, coating both sides and edges.
  5. Place coated chops on prepared wire rack. Drizzle olive oil over the top of each chop.
  6. Bake for 20-25 minutes, until golden brown and crispy. For extra crunch, broil for the last 1-2 minutes, watching carefully.
  7. Check internal temperature with a meat thermometer; it should reach 145°F. Let chops rest on the rack for 5 minutes.
  8. While chops rest, make garlic herb butter: combine softened butter, minced garlic, chopped parsley, and a pinch of salt. Mix until smooth.
  9. Serve chops with a generous dollop of garlic herb butter on top.

Notes

For thicker chops (over 1 inch), add 3-5 minutes cooking time. For thinner chops, reduce time. Use a meat thermometer for best results. Let chops rest before serving to keep them juicy.
