  • Sliced pickles or jalapeños (optional)
  • ½ cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp Dijon mustard
  • 1 tsp apple cider vinegar
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp hot sauce or cayenne pepper (optional)

Instructions

  1. Make the Zesty Special Sauce: In a mixing bowl, combine ½ cup mayonnaise, 2 tbsp ketchup, 1 tbsp Dijon mustard, 1 tsp apple cider vinegar, ½ tsp garlic powder, ½ tsp smoked paprika, and optional hot sauce. Whisk together until smooth and refrigerate while you prepare the burgers.
  2. Prepare the Beef: Divide the ground beef into 8 equal portions (about 2 oz each). Roll each portion loosely into a ball. Season both sides with salt and freshly ground pepper.
  3. Heat the Skillet: Place a cast iron or heavy skillet over medium-high heat and add 1-2 tbsp vegetable oil. Heat until a drop of water sizzles immediately, about 3 minutes.
  4. Smash the Patties: Place 2-3 beef balls in the skillet without overcrowding. Using a sturdy spatula or flat metal turner, press down firmly on each ball to flatten into a thin patty about 3-4 inches in diameter. Hold for 10 seconds to create a crispy crust. Cook for 2-3 minutes without moving.
  5. Flip and Finish Cooking: Flip the patties carefully and cook for another 1-2 minutes until edges are crispy and center is cooked through but juicy. Repeat with remaining patties.
  6. Warm the Tortillas: While the last patties cook, warm tortillas in a dry skillet or microwave for 20-30 seconds wrapped in a damp paper towel.
  7. Assemble the Tacos: Place a crispy patty on each tortilla. Top with shredded lettuce, diced tomatoes, sliced onions, and pickles or jalapeños if using. Drizzle generously with the zesty special sauce. Serve immediately.
