These crispy witch finger pretzel cookies are a fun and delicious Halloween treat. They combine a soft, buttery sugar cookie with a salty pretzel stick and an almond fingernail for a creepy yet irresistible snack.

  • 1 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • ½ teaspoon almond extract (optional)
  • 2 cups all-purpose flour

  • ½ teaspoon salt
  • Green food coloring (gel preferred)
  • 4050 pretzel sticks
  • ¼ cup sliced almonds
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large mixing bowl, beat the softened butter and granulated sugar together on medium speed until light and fluffy, about 2-3 minutes. Scrape down the sides halfway through.
  3. Beat in the egg, vanilla extract, and almond extract (if using) until fully combined. Add green food coloring (start with 8-10 drops of gel) and mix until evenly distributed.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. The dough should be soft but not sticky. If too sticky, refrigerate for 15 minutes.
  6. Scoop about 1 tablespoon of dough and roll into a log shape about 3 inches long, slightly tapering one end to look like a finger. Place on prepared baking sheet, spacing 2 inches apart.
  7. Gently press a pretzel stick into the center of each cookie log, pushing it down until about halfway embedded, running the length of the cookie.
  8. Press a sliced almond into the tapered end of each cookie, pointed end sticking out slightly like a fingernail.
  9. Optional: Use the back of a knife or toothpick to gently press two or three horizontal lines into the dough to mimic knuckles.
  10. Bake for 10-12 minutes. Cookies should be set around the edges but still slightly soft in the center.
  11. Let cookies cool on the baking sheet for 5 minutes, then transfer to a cooling rack to cool completely. If dusting with powdered sugar, wait until fully cool.
