Instructions

  1. Preheat your oven to 425°F (220°C). Butter two 6-ounce ramekins generously and dust with cocoa powder to prevent sticking.
  2. Melt the chocolate and butter together using a double boiler or microwave in 20-second bursts, stirring until smooth and glossy.
  3. In a separate bowl, whisk the eggs and sugar until pale and slightly thickened, about 3-4 minutes by hand or 2 minutes with a mixer.
  4. Slowly fold the melted chocolate mixture into the eggs and sugar, folding gently to maintain airiness.
  5. Add bourbon, vanilla extract, and a pinch of salt; stir just until combined.
  6. Fold in the flour gently until just incorporated.
  7. Stir in the toasted pecans.
