  • ½ teaspoon vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Separate pumpkin seeds from pulp. Rinse in a colander under cool water; leave a little pulp for flavor. Discard broken or shriveled seeds.
  3. Bring 2 cups water and 1 teaspoon salt to a boil in a medium saucepan. Add seeds and boil for exactly 10 minutes. Drain.
  4. Spread drained seeds on a clean kitchen towel and pat very dry. Let air-dry for 5 minutes.
  5. In a large bowl, whisk together melted butter, sugar, cinnamon, and vanilla until sugar is mostly dissolved (mixture will be grainy).
  6. Add dried seeds to the bowl and toss with a spatula until evenly coated.
  7. Spread seeds in a single layer on the prepared baking sheet. Roast for 25 minutes, then stir and flip seeds.
  8. Roast for another 20-25 minutes, stirring every 10 minutes, until golden brown, dry, and fragrant.
  9. Let seeds cool on the baking sheet for at least 15 minutes (they will crisp as they cool).
  10. Sprinkle with a tiny pinch of salt before serving. Serve immediately or store in an airtight container.
