This Easy Apple Cider Mimosa with Cinnamon Sugar Rim is a quick, five-minute brunch drink that combines crisp apple cider and dry Prosecco with a warm, spiced rim. It’s simple, crowd-pleasing, and perfect for any occasion.

Ingredients

Scale
  • 3 ounces apple cider (chilled)
  • 3 ounces Prosecco or dry sparkling wine (chilled)
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
  • 1 lemon or orange wedge (for rim)
  • 1 teaspoon honey or maple syrup (optional, for sweeter rim)

Instructions

  1. In a small shallow dish, mix 2 tablespoons granulated sugar with 1 teaspoon ground cinnamon until evenly combined.
  2. Run a lemon or orange wedge around the rim of a champagne flute to moisten it evenly.
  3. Invert the glass and dip the wet rim into the cinnamon sugar mixture, gently twisting for even coverage. Tap off excess and let set for 30 seconds.
  4. Fill the glass halfway with chilled apple cider (about 3 ounces).
  5. Slowly pour chilled Prosecco over the back of a spoon to preserve bubbles, filling almost to the top.
  6. Stir gently if desired, but avoid disturbing the rim.
  7. Serve immediately, garnished with a thin apple slice or cinnamon stick if desired.

Notes

Chill all ingredients and glasses for best results. Use a dry sparkling wine to balance the sweetness of the cider. Rim glasses just before serving to keep the sugar from dissolving. For a mocktail, replace Prosecco with sparkling apple cider or ginger ale.
