Easy Baked Apple Cider Donuts with Cinnamon Sugar

These soft, tender baked apple cider donuts are coated in cinnamon sugar and packed with concentrated apple flavor. Made with simple ingredients and ready in about 30 minutes, they’re the ultimate cozy fall treat.

  • 2 cups (250 grams) all-purpose flour
  • ¾ cup (150 grams) granulated sugar
  • ¼ cup (50 grams) light brown sugar, packed
  • ¼ cup (57 grams) unsalted butter, melted and cooled slightly
  • ¼ cup (60 ml) vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • For the Cinnamon Sugar Coating:
  • ½ cup (100 grams) granulated sugar
  • 1 ½ teaspoons ground cinnamon
  • 3 tablespoons (42 grams) unsalted butter, melted

Instructions

  1. Reduce the apple cider: Pour the apple cider into a medium saucepan and bring to a boil over medium-high heat. Reduce heat to medium-low and simmer, stirring occasionally, until reduced to about ⅓ cup (80 ml), about 15-20 minutes. Let cool completely.
  2. Preheat oven to 350°F (175°C). Spray a standard 6-cavity donut pan generously with non-stick cooking spray.
  3. In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, nutmeg, ginger, and cloves.
  4. In a separate medium bowl, whisk together the melted butter, vegetable oil, eggs, vanilla extract, and cooled reduced apple cider until smooth.
  5. Pour the wet ingredients into the dry ingredients and fold gently with a rubber spatula until just combined. Do not overmix; a few lumps are fine.
  6. Transfer the batter to a piping bag or zip-top bag with the corner snipped off. Pipe the batter into the prepared donut cavities, filling each about ¾ full.
  7. Bake for 10-12 minutes, or until golden brown and a toothpick inserted into the thickest part comes out clean. Let cool in the pan for 5 minutes, then transfer to a wire cooling rack.
  8. While the donuts are still warm (but not hot), brush each one with melted butter, then dip into the cinnamon sugar mixture, turning to coat both sides.
  9. Serve immediately while still warm, or store as desired.

Notes

Don’t skip reducing the cider—it concentrates the apple flavor. Use room temperature ingredients for best texture. Overmixing will make donuts tough. For best results, coat donuts while warm but not hot. Freeze uncoated donuts for up to 3 months.
