Ingredients

Scale
  • 4 medium apples, peeled and cored (Honeycrisp, Granny Smith, or Fuji)
  • 1 sheet frozen puff pastry, thawed
  • 4 tablespoons unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar, for sprinkling (optional)
  • 1/2 cup unsalted butter (for sauce)
  • 1 cup packed brown sugar (light or dark)
  • 1 teaspoon ground cinnamon (for sauce)
  • 1/4 teaspoon salt (for sauce)
  • 3/4 cup water (for sauce)
  • 1 teaspoon vanilla extract (for sauce)

Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish or line with parchment paper.
  2. Peel and core the apples, leaving the bottom intact so the filling doesn’t leak out.
  3. In a small bowl, mix softened butter, granulated sugar, cinnamon, and nutmeg into a paste. Divide into four portions and stuff each into the center of an apple.
  4. On a lightly floured surface, roll out the puff pastry slightly to about 1/8-inch thick. Cut into four equal squares.
  5. Place each stuffed apple in the center of a pastry square. Bring corners up to meet at the top, pinching seams to seal. Place seam-side down in the prepared dish, spacing about an inch apart.
  6. Brush each dumpling with beaten egg wash. Sprinkle with turbinado sugar if using.
  7. In a small saucepan over medium heat, melt butter for the sauce. Add brown sugar, cinnamon, salt, and water. Whisk until sugar dissolves and mixture simmers. Cook 2-3 minutes until slightly thickened. Remove from heat and stir in vanilla.
  8. Pour the warm sauce around the dumplings (not directly over them) until it comes about halfway up the sides. Bake at 375°F for 35-40 minutes, until pastry is deep golden brown and apples are tender.
  9. Let rest in the dish for 5-10 minutes before serving. Serve warm, spooning sauce over each dumpling.

Notes

Keep pastry cold for best flakiness. Don’t pour sauce directly over pastry to avoid sogginess. Granny Smith apples are recommended for their tartness. For dairy-free, use plant-based butter. Unbaked dumplings can be frozen for up to 3 months.
