Ingredients

Scale
  • 6 cups bread cubes (day-old brioche, challah, or thick sandwich bread)
  • 2 cups fresh or frozen mixed berries (blueberries, raspberries, blackberries)
  • 6 large eggs, room temperature
  • 2 cups whole milk (or half-and-half for extra richness)
  • 1/2 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup brown sugar
  • 2 tablespoons unsalted butter, melted
  • Optional: powdered sugar for dusting after baking

Instructions

  1. Cube 6 cups of bread into roughly 1-inch pieces and place them in your baking dish. Sprinkle 2 cups of fresh or frozen mixed berries evenly over the bread cubes.
  2. In a large bowl, whisk together 6 large eggs, 2 cups whole milk, 1/2 cup granulated sugar, 2 teaspoons vanilla extract, 1 teaspoon ground cinnamon, and 1/4 teaspoon salt until smooth and well combined.
  3. Pour the custard evenly over the bread and berries in the baking dish. Gently press the bread cubes down with a spatula or your hands to soak up the custard. Let it sit for about 10 minutes to absorb fully.
  4. In a small bowl, mix 1/4 cup brown sugar with 2 tablespoons melted unsalted butter. Sprinkle this mixture evenly over the soaked bread and berries.
  5. Preheat your oven to 350°F (175°C). Bake uncovered for 45-50 minutes, or until the custard is set and the topping is golden and crisp.
  6. Let the casserole rest for 5-10 minutes after baking. Dust with powdered sugar if desired and serve warm with maple syrup or whipped cream.

Notes

Let the bread soak in the custard for at least 10 minutes to achieve a custardy texture. If the top browns too quickly, tent with foil halfway through baking. Use day-old bread for best texture. For a dairy-free version, substitute milk with almond or oat milk and butter with coconut oil. Optional toppings include powdered sugar, maple syrup, whipped cream, or nuts for crunch.
