These crispy baked buffalo cauliflower bites are a game day favorite, ready in 35 minutes with a shatteringly crispy coating and bold buffalo flavor. Perfect as a vegetarian appetizer that even wing lovers will devour.

  • 1 large head of cauliflower (about 2 pounds), cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¾ cup milk (dairy or unsweetened almond milk)
  • 1 large egg
  • 1 tablespoon olive oil
  • ½ cup hot sauce (such as Frank’s RedHot)
  • 3 tablespoons unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon Worcestershire sauce (use vegan if needed)
  • Ranch or blue cheese dressing, for serving
  • Celery sticks and carrot sticks, for serving
  • Fresh parsley or green onions, chopped, for garnish

Instructions

  1. Preheat oven to 425°F (220°C). Line a large baking sheet with parchment paper or a silicone mat. If using a wire rack, place it on top of the lined baking sheet.
  2. Remove leaves from cauliflower and cut into bite-sized florets, about 1½ to 2 inches wide. Pat dry with a clean kitchen towel.
  3. In a medium bowl, whisk together flour, garlic powder, onion powder, smoked paprika, salt, and black pepper.
  4. In a separate bowl, whisk together milk, egg, and olive oil until smooth.
  5. Working in batches of 6-8 florets, toss in seasoned flour mixture until lightly coated. Shake off excess, dip into wet batter, then return to flour mixture and toss again until fully coated. Place on prepared baking sheet, leaving space between each.
  6. Bake for 20 minutes. Remove from oven, flip each floret with tongs, and bake for another 10-15 minutes until deeply golden and crispy (total 30-35 minutes).
  7. While cauliflower bakes, combine hot sauce, melted butter, honey (if using), and Worcestershire sauce in a small saucepan over low heat. Whisk until smooth and warmed. Alternatively, microwave in 20-second bursts.
  8. Transfer baked cauliflower to a large bowl. Pour warm buffalo sauce over and gently toss with tongs until evenly coated.
  9. Serve immediately on a platter, garnished with parsley or green onions, with ranch or blue cheese dressing and celery and carrot sticks on the side.

Notes

For best crispiness, pat cauliflower dry before coating. Use a wire rack for even airflow. Serve immediately for peak texture. Leftovers can be reheated in oven or air fryer; avoid microwave.
