Instructions

  1. Prepare your popcorn. Pop 1/2 cup of kernels using your preferred method (air popper, stovetop, or microwave). You should end up with about 8 cups of popped popcorn. Spread it out on the baking sheet and pick out any unpopped kernels. Let the popcorn cool completely while you prepare the other ingredients. This takes about 5 minutes.
  2. Line your baking sheet. Cover a large baking sheet with parchment paper or a silicone baking mat. Make sure it extends up the sides slightly to catch any drips. Set this aside within easy reach.
  3. Melt the white chocolate. Place 12 ounces of white chocolate chips and 1 tablespoon of coconut oil in a microwave-safe bowl. Microwave in 30-second intervals at 50% power, stirring well after each interval. White chocolate burns easily, so don’t rush this step. It usually takes about 2 to 3 minutes total. The mixture should be smooth and completely melted—no lumps allowed. If you prefer, use a double boiler on the stovetop over low heat.
  4. Combine the popcorn and candy corn. Place the cooled popcorn and 1 cup of candy corn in a large mixing bowl. Toss them together gently with your hands or a spatula to distribute the candy corn evenly. You want every handful to have a few pieces.
  5. Pour and toss. Pour the melted white chocolate mixture over the popcorn and candy corn. Use a silicone spatula to fold everything together gently. Work from the bottom up, making sure every piece of popcorn gets coated. Don’t overmix, or the popcorn might break. This should take about 1 minute.
  6. Spread the bark. Transfer the coated popcorn mixture to the prepared baking sheet. Spread it into an even layer, about 1/2 to 3/4 inch thick. Use the spatula to gently press it down, but don’t compact it too much—you want some texture and air pockets.

  8. Let it set. Allow the bark to set at room temperature for about 1 to 2 hours. Don’t put it in the refrigerator—the condensation can make the popcorn soggy. The bark is ready when the chocolate is firm and the pieces lift easily from the parchment paper. If you’re in a hurry, you can refrigerate for 30 minutes, but let it sit at room temperature for 10 minutes before breaking it apart.
  9. Break into pieces. Once set, use your hands to break the bark into irregular pieces. Don’t worry about making them uniform—rustic chunks look more appealing. Aim for pieces about 2 to 3 inches across.
