This easy cinnamon roll casserole is the perfect Christmas morning breakfast. Made with refrigerated cinnamon rolls, eggs, and heavy cream, it comes together in minutes and bakes into a warm, gooey, and utterly delicious dish that feeds a crowd.

Ingredients

Scale
  • 2 cans (12.4 oz each) refrigerated cinnamon rolls (with cream cheese frosting)
  • 4 large eggs
  • 1/2 cup heavy cream
  • 1/4 cup unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Cream cheese frosting (from the cinnamon roll cans)

Instructions

  1. Preheat your oven to 350°F (175°C). Generously butter a 9×13 inch baking dish with the melted butter, making sure to coat the corners.
  2. Open both cans of cinnamon rolls and set the frosting packets aside.
  3. Cut each cinnamon roll into quarters using a sharp knife or kitchen shears.
  4. Arrange half of the cinnamon roll pieces in the prepared baking dish in an even layer. Sprinkle with half of the brown sugar and half of the cinnamon.
  5. Add the remaining cinnamon roll pieces on top, spreading them evenly. Sprinkle with the remaining brown sugar and cinnamon. Press down gently with a spatula.
  6. In a large mixing bowl, whisk together the eggs, heavy cream, and vanilla extract until smooth and slightly frothy, about 30 seconds.
  7. Pour the egg mixture evenly over the cinnamon roll pieces, letting it seep into all the nooks and crannies. Gently press down any pieces sticking up above the liquid.
  8. Let the casserole rest for 10-15 minutes to allow the cinnamon rolls to absorb the custard.
  9. Bake for 28-32 minutes, until the top is golden brown and the center is set but still slightly jiggly.
  10. Remove from the oven and let cool for 5 minutes.
  11. Drizzle the reserved cream cheese frosting over the top. If the frosting is too thick, warm the packets in a bowl of hot water for 10 seconds.
  12. Serve warm.

Notes

Do not overbake; the center should still have a slight wobble when you pull it out. Let the casserole rest for at least 5 minutes before serving to allow the custard to set. Use room temperature eggs for even cooking. Do not skip the brown sugar layer—it creates a caramelized crust. Grease the pan generously with butter to prevent sticking.
