A stunning, no-cook charcuterie board featuring fresh cranberries, oranges, creamy cheeses, and savory meats. Perfect for Thanksgiving entertaining, this board is beautiful, customizable, and uses simple seasonal ingredients.

Ingredients

Scale
  • 1 cup fresh cranberries, rinsed and dried
  • 2 large oranges (navel or blood orange), sliced into thin rounds or wedges
  • ½ cup dried figs (optional)
  • 2 tablespoons honey
  • 8 ounces Brie cheese
  • 6 ounces aged cheddar cheese, sliced into thin wedges
  • 4 ounces goat cheese log
  • 6 ounces salami (Genoa or soppressata), thinly sliced
  • 4 ounces prosciutto, thinly sliced and torn into ribbons
  • ½ cup Marcona almonds (or regular almonds, toasted)
  • ½ cup pecans (candied or plain)
  • 1 box crackers (mix of water crackers and rosemary sea salt crackers)
  • 1 small baguette, sliced into thin rounds (lightly toasted if desired)
  • 34 fresh rosemary sprigs
  • A few sprigs fresh thyme (optional)

Instructions

  1. Prep your ingredients: Rinse fresh cranberries and let dry on a paper towel. Slice oranges into thin rounds (about ¼ inch thick) and cut each round in half. Slice baguette into thin rounds and lightly toast if desired. Unwrap cheeses and let sit at room temperature for about 15 minutes.
  2. Place your bowls and cheese: Put small bowls on the board first (at corners or in a triangle pattern). Add honey to one bowl. Place cheese wedges—brie whole, cheddar in a fan of slices, goat cheese log whole or in thick rounds. Space them out evenly.
  3. Add the meats: Fold salami slices into quarters or roll into cylinders. Drape prosciutto in loose ribbons. Place near the cheeses, with salami on one side and prosciutto on the other.
  4. Scatter the fruit: Scatter fresh cranberries in little clusters around the board. Tuck orange slices between cheese and meat piles. Add dried figs in small groups. Keep arrangement slightly chaotic for a natural look.
  5. Fill in with nuts and crackers: Pour almonds and pecans into small piles in empty spaces. Arrange crackers and baguette slices in stacks or fans. Fill most of the board so little empty space shows.
  6. Garnish and drizzle: Tuck rosemary and thyme sprigs between piles. Drizzle honey over brie and goat cheese. Step back and admire.
  7. Sensory check: Ensure board looks abundant and colorful, with citrus and herb aromas. Cranberries should be firm and bright.

Notes

For best results, let cheeses sit at room temperature for 20 minutes before serving. Keep crackers separate until serving to prevent sogginess. Use the ‘three of everything’ rule for visual balance. Fresh cranberries are preferred over dried for their tart pop. If making ahead, arrange everything except crackers and fresh herbs, adding them just before serving.
