These creamy Crockpot mashed potatoes with garlic and chives are the ultimate hands-off side dish. Slow-cooked to perfection, they deliver rich, buttery flavor without the stress of boiling and draining.

Ingredients

Scale
  • 3 pounds Russet or Yukon Gold potatoes, peeled and cut into 1-inch chunks
  • 6–8 cloves garlic, peeled and smashed
  • ½ cup (1 stick) unsalted butter, cut into cubes
  • 1 cup whole milk or half-and-half, divided
  • ½ cup low-sodium chicken or vegetable broth
  • ¼ cup fresh chives, finely chopped
  • 1 teaspoon kosher salt, plus more to taste
  • ½ teaspoon freshly ground black pepper
  • ¼ cup sour cream (optional)

Instructions

  1. Peel the potatoes and cut them into 1-inch chunks. Rinse in cold water to remove excess starch, then drain well.
  2. Place the potato chunks in a 6-quart or larger slow cooker. Add the smashed garlic cloves on top. Dot with the cubed butter. Pour in the chicken broth and ½ cup of the milk. Season with salt and pepper. Stir gently to coat.
  3. Cover and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, until the potatoes are fork-tender.
  4. Turn off the slow cooker (or set to warm). Mash the potatoes right in the Crockpot using a potato masher or hand mixer. If using a hand mixer, start on low speed and work up to medium, being careful not to overmix.
  5. Add the remaining ½ cup of milk and the sour cream (if using). Mash or mix again until smooth and combined. Taste and adjust salt and pepper as needed.
  6. Stir in most of the chopped chives, reserving about 1 tablespoon for garnish.
  7. Switch the Crockpot to the WARM setting to keep the potatoes hot and creamy for up to 2 hours. If they thicken too much, stir in a splash of warm milk before serving.

Notes

For best results, use Yukon Gold potatoes for a naturally buttery flavor. Warm the milk and butter before adding to prevent the potatoes from becoming gummy. Do not overmix to avoid gluey texture. These potatoes can be made a day ahead and reheated in a 350°F oven for 20-25 minutes or in the Crockpot on LOW for 1-2 hours.
