This creamy garden tomato basil soup is a quick and easy recipe made with simple ingredients, perfect for a weeknight dinner or meal prep. Roasting the tomatoes and garlic gives it a deep, caramelized flavor that makes it stand out from other tomato soups.

  • 2 pounds (about 900g) ripe tomatoes (Roma, cherry, or a mix)
  • 1 whole head garlic
  • 1 large yellow onion, diced
  • 1/2 cup packed fresh basil, plus more for garnish
  • 2 cups (480ml) vegetable broth, low-sodium preferred
  • 3 tablespoons olive oil, plus more for drizzling
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and halve the tomatoes. Place them cut-side up on a rimmed baking sheet.
  2. Cut the top off the head of garlic to expose the cloves. Drizzle with a little olive oil, wrap in foil, and place on the same baking sheet. Roast for 25-30 minutes until tomatoes are soft and caramelized.
  3. While roasting, heat 2 tablespoons olive oil in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 5-7 minutes until soft and translucent.
  4. Let the roasted tomatoes and garlic cool slightly. Squeeze the garlic cloves out of their skins. Add the garlic and all tomatoes (including juices) to the pot with the onions.
  5. Pour in the vegetable broth and add the fresh basil. Bring to a gentle simmer over medium heat and cook for 10-15 minutes, stirring occasionally.
  6. Remove the pot from heat. Use an immersion blender to blend the soup until smooth. If using a regular blender, work in batches and let the soup cool for 5-10 minutes first.
  7. Return the pot to low heat. Stir in the butter until melted, then add the balsamic vinegar, salt, pepper, and red pepper flakes if using. Taste and adjust seasoning.
  8. Serve immediately, drizzled with olive oil and garnished with fresh basil leaves.

Notes

Don’t skip the roasting step—it concentrates the tomato flavor and brings out natural sweetness. Season in layers by adding a pinch of salt at each stage. If using a regular blender, let the soup cool for at least 10 minutes before blending to avoid steam pressure. The soup thickens slightly as it sits and tastes even better the next day.
