Ingredients

Scale
  • 4 boneless pork chops, about 1-inch thick
  • 1/2 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh parsley, finely chopped
  • 1 teaspoon fresh thyme leaves
  • 1/2 teaspoon lemon zest
  • Pinch of salt

Instructions

  1. Preheat your oven to 425°F (220°C). Place a wire rack on a rimmed baking sheet and set it aside.
  2. Pat the pork chops dry with paper towels. Season both sides lightly with salt and pepper.
  3. Set up your breading station. In the first shallow bowl, add the flour. In the second bowl, beat the eggs with a tablespoon of water. In the third bowl, combine the panko breadcrumbs, grated Parmesan, garlic powder, onion powder, smoked paprika, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Mix it all together with a fork.
  4. Bread the pork chops. Working one at a time, dredge each chop in the flour, shaking off any excess. Then dip it into the beaten eggs, letting any extra drip off. Finally, press it into the breadcrumb mixture, making sure both sides are evenly coated. Place the breaded chop on the wire rack.
  5. Lightly drizzle or spray the tops of the breaded chops with olive oil.
  6. Bake for 15-20 minutes, until the internal temperature reaches 145°F (63°C) and the crust is golden brown and crispy.
  7. While the chops bake, make the garlic herb butter. In a small bowl, combine the softened butter, minced garlic, parsley, thyme, lemon zest, and a pinch of salt. Mash it all together with a fork until everything is evenly distributed. Set it aside at room temperature.
  8. When the chops come out of the oven, let them rest on the wire rack for 3-5 minutes. Then transfer to plates and immediately top each chop with a generous pat of the garlic herb butter.

Notes

For the best texture, look for pork chops that are at least 1-inch thick. Thin chops tend to dry out before the crust gets crispy. If you don’t have a wire rack, flip the chops halfway through cooking. For a gluten-free version, swap the all-purpose flour for a gluten-free blend and use gluten-free panko breadcrumbs. For a low-carb or keto option, skip the breadcrumbs entirely and use a mixture of almond flour and Parmesan as the coating.
