This Crockpot chicken breast recipe delivers tender, juicy chicken every time, whether using fresh or frozen breasts. With simple seasonings and a foolproof method, it’s a weeknight lifesaver that kids love.

Ingredients

Scale
  • 1.5 to 2 pounds boneless, skinless chicken breasts (about 3–4 medium breasts)
  • 1/2 cup low-sodium chicken broth
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon dried thyme (optional)

Instructions

  1. For fresh chicken: Pat the chicken dry with paper towels. Season both sides with garlic powder, onion powder, paprika, salt, pepper, and dried thyme. Rub in gently.
  2. Place the chicken in the bottom of the Crockpot in a single layer. Drizzle with olive oil and pour chicken broth around the edges, not directly over the chicken.
  3. Cover and cook on LOW for 2.5 to 3 hours, or on HIGH for 1.5 to 2 hours, until the internal temperature reaches 165°F (74°C).
  4. Let the chicken rest in the Crockpot with the lid on for 5 minutes. Shred or slice using two forks.
  5. For frozen chicken: Place frozen chicken directly in the Crockpot. Season generously with the same spices. Add broth and oil as above.
  6. Cook on LOW for 4 to 5 hours, or on HIGH for 2.5 to 3 hours, until internal temperature reaches 165°F. Shred and serve.

Notes

For frozen chicken, add an extra 1/4 cup of broth to compensate for longer cooking time. Do not lift the lid during cooking. Chicken breasts of similar size cook more evenly. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
