  • 1 1/4 cups milk (dairy or unsweetened plant-based)

  • 1/4 cup unsalted butter, melted
  • 1 tablespoon honey or maple syrup (optional)
  • 1 teaspoon Worcestershire sauce
  • Ranch or blue cheese dressing, for dipping (optional)
  • Celery and carrot sticks, for serving (optional)
  • Fresh chives or green onions, chopped, for garnish (optional)

Instructions

  1. Preheat your oven to 450°F (230°C). Line a large baking sheet with aluminum foil or parchment paper. Place a wire cooling rack on top and spray generously with non-stick cooking spray.
  2. Wash and thoroughly dry the cauliflower head. Cut into bite-sized florets, about 1 to 1.5 inches wide, aiming for roughly the same size.
  3. In a large bowl, whisk together the all-purpose flour, cornstarch, garlic powder, onion powder, smoked paprika, salt, and black pepper. Slowly pour in the milk while whisking continuously until smooth and lump-free (consistency of thin pancake batter).
  4. Add the cauliflower florets to the batter and gently toss until each floret is evenly coated.
  5. Using tongs, lift each battered floret out of the bowl, allowing excess batter to drip off, and place on the prepared wire rack in a single layer with space between them.
  6. Bake for 20 minutes, then carefully flip each floret using tongs. Bake for another 10-15 minutes, until golden brown, crispy on the outside, and tender when pierced with a fork (total 30-35 minutes).
  7. While the cauliflower bakes, make the buffalo sauce: In a small saucepan over low heat or in a microwave-safe bowl, combine the hot sauce, melted butter, honey (if using), and Worcestershire sauce. Whisk until smooth and warmed through.
  8. Once the cauliflower is done, transfer the hot florets to a large bowl. Pour the warm buffalo sauce over the top and toss gently with tongs until evenly coated. Serve immediately with ranch or blue cheese dressing, celery sticks, and a sprinkle of fresh chives.

Notes

For extra crispiness, ensure cauliflower is thoroughly dried before battering. Do not overcrowd the baking sheet. Serve immediately for best texture. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days; reheat in an air fryer or oven to restore crispiness.
