Easy Garlic Butter Steak and Potato Dinner

A quick and flavorful weeknight meal featuring juicy steak and crispy roasted potatoes tossed in a rich garlic butter sauce. Perfect for busy evenings when you want comfort food without the fuss.

  • 2 ribeye or sirloin steaks, about 8 ounces each, room temperature
  • 1 pound baby Yukon gold or red potatoes, halved or quartered
  • 4 tablespoons unsalted butter, divided
  • 4 cloves garlic, minced
  • 2 teaspoons fresh thyme or rosemary, chopped (optional)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon fresh lemon juice (optional)

Instructions

  1. Preheat your oven to 425°F (220°C). Toss the halved potatoes with 1 tablespoon olive oil, ½ teaspoon salt, and a pinch of pepper. Spread them in a single layer on a baking sheet and roast for 25-30 minutes, flipping halfway, until golden and crispy on the outside and tender inside.
  2. While potatoes roast, prepare the garlic butter. In a small bowl, combine 3 tablespoons softened butter, minced garlic, chopped fresh herbs, and lemon juice if using. Mix well and set aside.
  3. Season the steaks generously with salt and freshly cracked black pepper on both sides. Let them rest at room temperature for about 10 minutes while the potatoes roast.
  4. Heat a large oven-safe skillet over medium-high heat and add 1 tablespoon olive oil. When the oil is shimmering but not smoking, add the steaks. Sear for 3-4 minutes without moving to develop a nice crust. Flip and sear the other side for 3 minutes.
  5. Reduce heat to medium-low and add the remaining 1 tablespoon butter and half of the prepared garlic butter to the skillet. Spoon the melted garlic butter over the steaks continuously for 1-2 minutes.
  6. Transfer the skillet to the preheated oven. Roast steaks for 4-6 minutes, depending on thickness and desired doneness (4 minutes for medium-rare, 6 for medium).
  7. Remove the skillet from the oven; transfer steaks to a plate and cover loosely with foil. Rest for 5-7 minutes.
  8. While the steak rests, toss the roasted potatoes with the remaining garlic butter and a sprinkle of fresh herbs.
  9. Serve the steaks alongside the garlic butter potatoes. Drizzle any pan juices over the meat for extra taste.

Notes

If your skillet isn’t oven-safe, sear the steak first on the stovetop, then transfer to a baking dish to finish in the oven. Keep the heat medium-low during basting to avoid burning the garlic. Rest the steak after cooking to redistribute juices. Parboiling potatoes before roasting can speed up cooking and improve crispiness. For dairy-free, substitute butter with vegan spread and olive oil. Leftovers reheat best in a skillet over medium heat to keep steak juicy and potatoes crispy.
