A quick and easy one-skillet ground turkey taco recipe perfect for busy weeknights and meal prep. Made with simple ingredients like ground turkey, salsa, black beans, and corn, it comes together in under 25 minutes and is packed with flavor.

  • 1 pound (450g) ground turkey (93% lean)
  • 1 tablespoon (15ml) olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 3 garlic cloves, minced
  • 1 medium red bell pepper, diced
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14.5 oz or 400g) fire-roasted diced tomatoes
  • 1/2 cup (120ml) salsa (medium heat)
  • 1 can (15 oz or 425g) black beans, drained and rinsed
  • 1 cup (150g) frozen corn
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)
  • Shredded cheese (optional, for serving)
  • Sour cream or Greek yogurt (optional, for serving)
  • Avocado, sliced (optional, for serving)

Instructions

  1. Heat the olive oil in a large skillet over medium-high heat until shimmering.
  2. Add the ground turkey and cook undisturbed for 2-3 minutes to get good browning. Then break it apart and cook for 5-6 minutes total until no longer pink and golden-brown spots appear.
  3. Push the turkey to one side of the skillet. Add the diced onion and cook for 2 minutes until softened. Add the minced garlic and diced bell pepper, cook for 1 more minute.
  4. Sprinkle the chili powder, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, and pepper over the turkey and vegetables. Stir and cook for 30 seconds to toast the spices.
  5. Pour in the canned diced tomatoes (with juices) and salsa. Stir to combine, scraping up any browned bits from the bottom of the pan.
  6. Bring to a gentle boil, then reduce heat to medium-low. Simmer uncovered for 8-10 minutes, stirring occasionally, until the sauce thickens slightly.
  7. Stir in the drained black beans and frozen corn. Cook for 2-3 minutes until heated through.
  8. Taste and adjust seasoning if needed. Remove from heat.
  9. Serve immediately with desired toppings (cilantro, lime, cheese, sour cream, avocado) or let cool slightly before portioning into meal prep containers.

Notes

For best results, use 93% lean ground turkey and fire-roasted diced tomatoes. Let the turkey brown undisturbed for 2-3 minutes to develop flavor. Toast the spices for 30 seconds before adding liquid. The skillet can be stored in the refrigerator for up to 5 days or frozen for up to 3 months. Reheat in a skillet with a splash of water or broth.
