Ingredients

Scale
  • 1 large wheel of brie cheese (8–10 ounces), room temperature
  • 8–10 slices of prosciutto, thinly sliced
  • 2–3 fresh rosemary sprigs
  • 8 ounces sharp cheddar cheese, cubed
  • 4 ounces salami, sliced into thin rounds
  • 1/2 cup fig jam or honey
  • 1/2 cup marinated olives
  • 1/2 cup roasted red peppers, sliced into strips
  • 1/4 cup pumpkin seeds, toasted
  • 1 cup fresh grapes (red or green)
  • 1 apple, sliced (tossed with lemon juice)
  • 8 ounces assorted crackers and breadsticks
  • Fresh sage leaves (optional, for decoration)
  • Edible flowers or microgreens (optional, for decoration)
  • Small Halloween-shaped cookie cutters (optional, for cheese)

Instructions

  1. Prepare the brie pumpkin: Place the room-temperature brie wheel in the center of your board. Gently shape the top into a slight peak with your hands.
  2. Wrap the brie in prosciutto: Drape prosciutto slices over the brie, one at a time, overlapping slightly. Start at the bottom and work upward, pressing gently so the prosciutto sticks. Use about 6-8 slices to create pumpkin ridges. Tuck the ends under the bottom.
  3. Add the stem: Insert 2-3 fresh rosemary sprigs into the top center of the brie to form the pumpkin stem. Trim with kitchen shears if needed.
  4. Arrange the cheddar and salami: Cube the sharp cheddar into 1-inch pieces and scatter around the base of the pumpkin. Roll salami slices into roses by folding each in half and rolling tightly, placing them seam-side down.
  5. Fill in the gaps: Place small bowls of fig jam and olives on the board. Fill remaining spaces with grapes, apple slices, and roasted red peppers. Sprinkle pumpkin seeds around for texture.
  6. Add crackers and breadsticks: Arrange crackers and breadsticks around the edges of the board, fanning them out slightly. Tuck some under the cheese for a layered look.
  7. Final touches: Add fresh sage leaves around the base of the brie pumpkin to resemble pumpkin leaves. Scatter edible flowers or microgreens for color if desired. Ensure the board looks abundant with no empty spaces.
  8. Serve immediately or refrigerate: If making ahead, cover the board with plastic wrap and refrigerate for up to 4 hours. Remove from the fridge 30 minutes before serving to let the cheese come to room temperature.

Notes

Ensure brie is at room temperature to prevent cracking. For extra pumpkin ridges, use kitchen twine to gently press lines into the prosciutto-wrapped brie before adding the rosemary stem. Prep ingredients the night before for quicker assembly. Leftover brie pumpkin can be stored wrapped in plastic wrap in the fridge for up to 3 days.
