Ingredients

  • Mini pita breads (about 4-inch rounds), preferably whole wheat
  • Tomato sauce (marinara or pizza sauce)
  • Shredded mozzarella cheese (about 1/4 cup or 28g per mini pizza)
  • Pepperoni slices (turkey or beef, or mini turkey sausage pieces)
  • Sliced black olives (optional)
  • Chopped bell peppers
  • Oregano and basil (dried or fresh)
  • Olive oil (for brushing)
  • Parmesan cheese (optional)
  • Mini containers or small snack cups (optional, for sauce dipping)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat to prevent sticking.
  2. Slice the pepperoni, bell peppers, and olives if not already sliced. Have shredded mozzarella and tomato sauce ready in small bowls for easy assembly.
  3. Lay out the mini pita breads on the baking sheet, spaced evenly. Lightly brush each pita with olive oil.
  4. Spread a thin layer of tomato sauce (about 1-2 tablespoons) on each pita using the back of a spoon.
  5. Sprinkle shredded mozzarella generously over the sauce (about 1/4 cup per mini pizza).
  6. Add toppings such as pepperoni slices, bell peppers, and olives as desired.
  7. Sprinkle a pinch of dried oregano and basil over each pizza.
  8. Optionally, grate a little Parmesan cheese on top.
  9. Bake in the preheated oven for 10-12 minutes, or until the cheese is melted and bubbly and the edges of the pita are golden brown.
  10. Remove from oven and let cool for a few minutes before packing or serving. Include a small container of extra sauce on the side if desired.
