A crunchy, creamy, tangy, and herbaceous cucumber salad that comes together in 15 minutes. Perfect for potlucks, dinner parties, or a quick side dish.

Ingredients

Scale
  • 4 large English cucumbers (about 2 pounds)
  • 1 teaspoon kosher salt (for salting the cucumbers)
  • 1/2 cup crumbled feta cheese (about 4 ounces)
  • 1/4 cup finely diced red onion
  • 1/4 cup fresh dill, chopped
  • 1/4 cup kalamata olives, halved (optional)
  • 1/4 cup plain Greek yogurt (full-fat or 2%)
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 teaspoon white wine vinegar
  • 1 small clove garlic, minced
  • 1/4 teaspoon black pepper, freshly ground
  • Pinch of sugar (optional)

Instructions

  1. Prep the cucumbers: Wash and dry cucumbers. Slice off ends, cut each in half lengthwise, and scrape out seeds. Slice into half-moons about 1/4-inch thick.
  2. Salt the cucumbers: Place slices in a colander over a bowl. Sprinkle with 1 teaspoon kosher salt, toss gently, and let sit for 15-20 minutes.
  3. Rinse and dry: Rinse cucumber slices under cold water to remove excess salt. Pat dry with a clean kitchen towel or paper towels.
  4. Make the dressing: In a small bowl, whisk together Greek yogurt, olive oil, lemon juice, white wine vinegar, minced garlic, and black pepper. Adjust seasoning to taste.
  5. Soak the red onion: Place diced red onion in a small bowl and cover with cold water. Let sit for 5 minutes, then drain and pat dry.
  6. Assemble the salad: In a large mixing bowl, combine dried cucumber slices, soaked red onion, chopped dill, and halved kalamata olives. Pour dressing over and toss gently to coat.
  7. Add the feta: Gently fold in crumbled feta, reserving a small handful for garnish. Sprinkle reserved feta on top.
  8. Chill and serve: Cover and refrigerate for at least 30 minutes before serving. Garnish with fresh dill and black pepper.

Notes

Salting the cucumbers is crucial to prevent a watery salad. For best results, let the salad chill for at least 30 minutes before serving. If making ahead, store dressing separately and toss just before serving.
