  • 1 cup (250 g) creamy or natural peanut butter
  • 1 1/2 cups (135 g) old-fashioned rolled oats
  • 1/3 cup (113 g) honey
  • 2 tablespoons (14 g) ground flaxseed (optional)
  • 1/2 cup (90 g) mini chocolate chips
  • 1 teaspoon (5 ml) vanilla extract
  • Pinch of salt

Instructions

  1. Measure out all ingredients: peanut butter, rolled oats, honey, ground flaxseed, mini chocolate chips, vanilla extract, and salt.
  2. In a mixing bowl, combine peanut butter, honey, and vanilla extract. Stir well until smooth and shiny, about 1-2 minutes.
  3. Add rolled oats, ground flaxseed, salt, and chocolate chips. Fold together until a sticky dough forms that holds when pressed. Add a teaspoon of water or more honey if too dry.
  4. Portion mixture into 1 inch (2.5 cm) bite-sized balls using hands or a small cookie scoop. Roll gently between palms. Use lightly oiled hands if sticky.
  5. Place bites on a baking sheet or plate lined with parchment paper and chill in the refrigerator for at least 30 minutes to firm up.
  6. Enjoy immediately or store leftovers in an airtight container in the fridge for up to one week or freeze for longer storage.

Notes

If mixture is too sticky, refrigerate for 10-15 minutes before rolling. Use rolled oats for best texture. Customize with chia seeds, cinnamon, or nut butters for variations. Store in airtight container in fridge up to one week or freeze up to 3 months.
