This easy one-bowl pumpkin banana bread is a forgiving, pantry-friendly recipe that combines ripe bananas and pumpkin puree for an incredibly moist and tender loaf. Perfect for fall mornings, it comes together in one bowl with no electric mixer required.

  • 1 cup pumpkin puree (not pumpkin pie filling)
  • ¾ cup granulated sugar
  • ¼ cup packed brown sugar
  • ⅓ cup vegetable oil
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1¾ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • ⅛ teaspoon ground cloves
  • Optional: ½ cup chocolate chips, chopped walnuts, or pecans

Instructions

  1. Preheat oven to 350°F (175°C). Line a 9×5-inch loaf pan with parchment paper, leaving overhang on long sides. Lightly grease exposed sides.
  2. In a large mixing bowl, mash bananas with a fork or potato masher until mostly smooth with a few small lumps.
  3. Add pumpkin puree, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Stir until well combined and smooth.
  4. Sprinkle flour, baking soda, baking powder, salt, cinnamon, nutmeg, ginger, and cloves over the wet mixture. Do not stir yet.
  5. Stir dry ingredients into wet mixture using a folding motion until just combined. Do not overmix; a few lumps are fine.
  6. If using add-ins (chocolate chips, nuts), fold them in gently.
  7. Pour batter into prepared loaf pan, spread evenly, and tap pan on counter to release air bubbles.
  8. Bake for 50-60 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs. Internal temperature should reach 200-205°F.
  9. Cool in pan for 10 minutes, then lift out using parchment paper and transfer to a cooling rack.
  10. Cool completely before slicing (at least 1 hour).

Notes

Don’t overmix the batter to avoid dense bread. Use very ripe bananas for best sweetness. If top browns too quickly, tent with foil. Bread tastes even better on day two. For muffins, bake at 350°F for 18-22 minutes.
