Ingredients

Scale
  • 4 salmon fillets (about 6 oz / 170 g each), skin-on for extra crispiness
  • 3 tablespoons soy sauce (low sodium preferred)
  • 2 tablespoons honey (raw honey recommended)
  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger (optional)
  • 1 tablespoon sesame oil
  • Freshly ground black pepper, to taste
  • 1 large English cucumber, thinly sliced or julienned
  • 1 tablespoon toasted sesame seeds
  • 1 tablespoon rice vinegar
  • 1 teaspoon soy sauce
  • 1 teaspoon honey
  • A pinch of red pepper flakes (optional)
  • 2 green onions, thinly sliced

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a small bowl, whisk together 3 tablespoons soy sauce, 2 tablespoons honey, 1 tablespoon rice vinegar, minced garlic, grated ginger, and 1 tablespoon sesame oil until well combined.
  3. Place the salmon fillets skin-side down on the prepared baking sheet, spacing them apart. Pat dry with a paper towel.
  4. Brush the honey soy glaze generously over each fillet, reserving some glaze for basting. Season lightly with freshly ground black pepper.
  5. Bake the salmon for 12-15 minutes depending on thickness. Halfway through, baste with the reserved glaze. The salmon should be opaque and flake easily with a fork when done.
  6. While the salmon bakes, combine the cucumber, green onions, toasted sesame seeds, 1 tablespoon rice vinegar, 1 teaspoon soy sauce, 1 teaspoon honey, and red pepper flakes in a bowl. Toss well and set aside to marinate.
  7. Remove the salmon from the oven and let rest for a couple of minutes to redistribute juices.
  8. Serve the salmon warm alongside a generous scoop of the sesame cucumber salad.

Notes

Pat salmon dry before glazing to help skin crisp and glaze stick. Toast sesame seeds for enhanced flavor. Optionally finish salmon under broiler 1-2 minutes for crispier skin. Store salmon and salad separately for best freshness. Use tamari for gluten-free option. Substitute sesame oil with mild vegetable oil if needed.
