  • 1 ½ cups fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries, rinsed and patted dry
  • ½ cup fresh raspberries (optional)
  • 1 ½ cups heavy whipping cream, chilled
  • 3 tablespoons powdered sugar, sifted
  • 1 teaspoon pure vanilla extract
  • Fresh lemon zest from 1 lemon (optional)

Instructions

  1. Rinse the strawberries, blueberries, and raspberries gently under cold water. Pat dry with paper towels. Hull and slice the strawberries into halves or quarters depending on size. Set aside.
  2. Cut the angel food cake into roughly 1-inch cubes, keeping them fairly uniform.
  3. In a chilled mixing bowl, pour the heavy whipping cream. Add the powdered sugar and vanilla extract. Beat on medium-high speed until soft peaks form. Fold in lemon zest gently if using.
  4. In a large clear glass bowl, spoon a layer of angel food cake cubes. Add a handful of mixed berries on top. Spread a layer of whipped cream over the berries, smoothing gently with a spatula. Repeat layers until ingredients are used, finishing with whipped cream on top.
  5. Cover the trifle with plastic wrap and refrigerate for at least 1 hour to let flavors meld and cake soak berry juices.
  6. Before serving, garnish with extra whole berries and a sprinkle of lemon zest or a mint leaf if desired.

Notes

Chill bowl and beaters before whipping cream for best results. Do not overbeat cream to avoid turning it into butter. Use fresh berries for best texture; if using frozen, thaw and drain well. Let trifle chill at least 1 hour before serving to allow flavors to meld and cake to soak berry juices. Serve within 1-2 days for best cream stability. For dairy-free version, substitute heavy cream with chilled whipped coconut cream. For gluten-free, use gluten-free sponge cake instead of angel food cake.
