  • 1 cup (200g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 2 ½ cups (312g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 8 oz (227g) cream cheese, softened
  • ½ cup (120ml) heavy whipping cream
  • ¼ cup (30g) powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1 cup fresh blueberries
  • Optional: fresh raspberries or blackberries

Instructions

  1. In a large bowl, cream together 1 cup softened butter and 1 cup granulated sugar until light and fluffy, about 3-4 minutes using an electric mixer.
  2. Add the egg and 1 teaspoon vanilla extract, mixing until combined.
  3. In a separate bowl, whisk together 2 ½ cups all-purpose flour, ½ teaspoon baking powder, and ¼ teaspoon salt.
  4. Slowly add the dry ingredients to the wet, mixing on low speed until just incorporated.
  5. Line your baking sheet with parchment paper and press the dough evenly into the pan, about ¼ inch (6 mm) thick, keeping edges a little thicker.
  6. Bake at 350°F (175°C) for 18-20 minutes or until edges are light golden brown. Cool completely on a wire rack.
  7. While the crust cools, beat 8 oz softened cream cheese in a medium bowl until smooth.
  8. In a separate chilled bowl, whip ½ cup heavy cream until soft peaks form.
  9. Gradually add ¼ cup powdered sugar and 1 teaspoon vanilla extract to the cream cheese, mixing until combined.
  10. Gently fold the whipped cream into the cream cheese mixture until smooth and fluffy.
  11. Spread the cream cheese topping evenly over the cooled sugar cookie crust.
  12. Arrange blueberries in the top left corner to form the stars area of the flag.
  13. Create stripes by alternating rows of sliced strawberries and blueberries across the rest of the pizza.
  14. Refrigerate the fruit pizza for at least 30 minutes before serving.

Notes

Pat dry berries before placing to avoid soggy topping. Cool crust completely before adding topping to prevent melting. Dough should not be overmixed after adding flour to keep crust tender. Can prepare crust a day ahead and assemble before serving. For gluten-free, substitute almond flour; for vegan, use dairy-free cream cheese and coconut whipped cream.
