This hearty breakfast casserole combines savory sausage, crispy hash browns, fluffy eggs, and melted cheese for a comforting dish that’s perfect for holidays, brunches, or lazy weekends. It can be prepped the night before and baked in the morning.

Ingredients

Scale
  • 1 lb (450g) breakfast sausage
  • 30 oz (850g) frozen shredded hash browns, thawed and patted dry
  • 8 large eggs, room temperature preferred
  • 1 ½ cups (360ml) whole milk
  • 2 cups (200g) shredded cheddar cheese
  • ½ cup (120ml) sour cream
  • ½ teaspoon fine sea salt
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder (optional)
  • 2 tablespoons (28g) unsalted butter, for greasing

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with the butter.
  2. In a large skillet over medium-high heat, cook the breakfast sausage, breaking it up with a spatula, until browned and no longer pink (6-8 minutes). Drain excess grease, leaving a little for flavor. Set aside to cool slightly.
  3. While sausage cooks, wrap thawed hash browns in a clean kitchen towel or paper towels and squeeze out as much moisture as possible.
  4. In a large mixing bowl, whisk together eggs, milk, sour cream, salt, pepper, and garlic powder until smooth and well combined.
  5. Spread the squeezed-dry hash browns evenly in the bottom of the prepared baking dish. Sprinkle the cooked sausage over the top. Pour the egg mixture evenly over everything. Sprinkle the shredded cheddar cheese on top.
  6. Bake for 40-45 minutes, or until the center is set and the edges are golden brown. A knife inserted into the center should come out clean.
  7. Let the casserole rest for 5-10 minutes before cutting into squares. Serve warm.

Notes

For overnight prep: Assemble the casserole the night before, cover with foil, and refrigerate. In the morning, let it sit on the counter for 20 minutes while the oven preheats, then bake as directed, adding 5-10 minutes to the baking time. To prevent a watery casserole, ensure hash browns are thoroughly dried. Let the casserole rest after baking to set properly.
