This Easy Sausage and Hash Brown Breakfast Casserole is a foolproof, crowd-pleasing dish perfect for holiday mornings or lazy weekends. With a crispy hash brown base, savory sausage, and melted cheese, it’s comfort food at its finest.

  • 1 (30-ounce) bag frozen shredded hash browns, thawed slightly
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 small yellow onion, diced (about 1 cup)
  • 1 green bell pepper, diced (optional)
  • 8 large eggs, room temperature
  • 1 ½ cups whole milk
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ¼ teaspoon smoked paprika (optional)
  • ½ cup shredded cheddar cheese (for topping)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or non-stick spray.
  2. Cook the breakfast sausage in a large skillet over medium-high heat, breaking it apart, until browned and cooked through (6-8 minutes). Leave about a tablespoon of fat in the pan. Transfer sausage to a plate using a slotted spoon.
  3. In the same skillet, sauté the diced onion and bell pepper over medium heat for 3-4 minutes until softened.
  4. Spread the thawed frozen hash browns evenly in the prepared baking dish, pressing down gently to create an even layer.
  5. Sprinkle the cooked sausage evenly over the hash browns, followed by the sautéed onions and peppers.
  6. Sprinkle 2 cups cheddar and 1 cup mozzarella over the sausage layer. Reserve ½ cup cheddar for topping.
  7. In a large mixing bowl, whisk together the eggs, milk, salt, pepper, garlic powder, and smoked paprika until uniform and slightly frothy (about 30 seconds).
  8. Slowly pour the egg mixture evenly over the casserole. Let it sit for 2-3 minutes to seep through the layers.
  9. Cover the dish with aluminum foil and bake for 35 minutes.
  10. Remove foil, sprinkle the reserved ½ cup cheddar cheese on top, and bake uncovered for another 10-15 minutes until the cheese is melted and bubbly and the edges are golden brown. The center should be set.
  11. Let the casserole rest for 5-10 minutes before serving.
  12. Garnish with fresh parsley, slice into squares, and serve warm.

Notes

For best results, thaw hash browns slightly before using to prevent a watery casserole. Let the casserole rest after baking to allow the eggs to set. If the top browns too quickly, tent with foil. This casserole can be assembled the night before and refrigerated; add 5-10 minutes to covered baking time if starting cold.
