Easy Sheet-Pan Salmon with Lemon Garlic Butter

A quick and easy sheet-pan salmon recipe with a rich lemon garlic butter sauce. Ready in under 30 minutes with minimal cleanup, this flaky and tender salmon is perfect for busy weeknights.

  • 4 salmon fillets (about 6 oz each)
  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 large lemon (zest and juice)
  • 1 tablespoon olive oil
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Fresh parsley for garnish (optional)
  • Vegetables (optional): asparagus, broccoli florets, or cherry tomatoes

Instructions

  1. Preheat your oven to 400°F (200°C). Place the oven rack in the center position.
  2. Line a large sheet pan with parchment paper or aluminum foil. Drizzle 1 tablespoon of olive oil on the pan and spread it around.
  3. In a small bowl, combine 4 tablespoons of melted unsalted butter, minced garlic, lemon zest, and 1 tablespoon of fresh lemon juice. Whisk together and set aside.
  4. Pat the salmon fillets dry with paper towels. Place them skin-side down on the prepared pan. Season generously with salt, pepper, and dried oregano.
  5. If using vegetables, arrange them around the salmon fillets. Toss them with a little olive oil, salt, and pepper.
  6. Spoon the lemon garlic butter mixture evenly over each salmon fillet and over the vegetables.
  7. Bake for 12-15 minutes, depending on the thickness of the fillets. The salmon is done when it flakes easily with a fork and the internal temperature reaches 125-130°F for medium.
  8. Remove the pan from the oven and let it rest for 2-3 minutes. Squeeze the remaining lemon half over the top. Garnish with fresh parsley, if desired.

Notes

For an even richer sauce, place small cubes of cold butter directly on the salmon instead of melting it first. Start checking for doneness at the 10-minute mark. Let the salmon rest for 2-3 minutes before serving. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a low oven (300°F) for about 10 minutes.
