This creamy, tangy, and perfectly spiced buffalo chicken dip is made in the slow cooker with simple ingredients. It’s the ultimate set-it-and-forget-it appetizer that converts even spicy-food skeptics.

Ingredients

Scale
  • 2 cups cooked, shredded chicken (about 2 large chicken breasts or 1 rotisserie chicken)
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce (such as Frank’s RedHot Original)
  • 1/2 cup ranch dressing (or blue cheese dressing)
  • 1/2 cup shredded cheddar cheese (sharp cheddar recommended)
  • 1/4 cup crumbled blue cheese (optional)
  • Kettle-cooked potato chips, for serving
  • Celery sticks and carrot sticks, for serving
  • Tortilla chips, for serving
  • Crusty bread or baguette slices, for serving

Instructions

  1. Shred your chicken first. If using rotisserie chicken, remove skin and bones, then shred with two forks. If cooking your own, boil or bake chicken breasts until cooked through, then shred while warm.
  2. Soften the cream cheese by letting it sit at room temperature for 30 minutes, or microwave for 15-20 seconds on low power.
  3. Combine shredded chicken, softened cream cheese, buffalo wing sauce, ranch dressing, and shredded cheddar cheese in the slow cooker. Stir until cream cheese begins to break down and coat the chicken.
  4. Cook on low for 2 hours, stirring once after 1 hour. If in a rush, cook on high for 1 hour.
  5. About 15 minutes before serving, gently fold in crumbled blue cheese (if using).
  6. Taste and adjust seasoning: add more buffalo sauce for heat, or more ranch to mellow.
  7. Switch slow cooker to warm setting until ready to serve. Stir before serving if dip has separated.

Notes

For best texture, use full-fat cream cheese and avoid fat-free dressings. Let ingredients come to room temperature before cooking. If dip is too runny, stir in extra cream cheese or cheddar and cook with lid off for 15-20 minutes. Leftovers can be refrigerated for up to 4 days or frozen for 3 months.
