Instructions

  1. In a small mixing bowl, whisk together 1/2 cup honey, 1/2 cup low-sodium soy sauce, and 6 minced garlic cloves until well combined.
  2. Place 2 lbs boneless, skinless chicken thighs in the bottom of your slow cooker, arranging them in a single layer if possible.
  3. Pour the honey garlic mixture evenly over the chicken thighs. Use tongs to gently turn the chicken pieces so they are all coated.
  4. Cover the slow cooker with the lid. Cook on LOW for 4 to 5 hours or on HIGH for 2.5 to 3 hours. The chicken is done when it reaches an internal temperature of 165°F (74°C) and shreds easily with a fork.
  5. Optional: About 20 minutes before serving, carefully remove the chicken thighs from the slow cooker and place them on a plate. In a small bowl, whisk 1 tablespoon cornstarch with 2 tablespoons cold water until smooth. Pour this slurry into the remaining sauce in the slow cooker. Stir well, then return the chicken to the pot.
