Ingredients

  • Large flour tortillas (10-inch/25 cm) – fresh and soft; whole wheat optional
  • Ripe avocados (about 1 large or 2 small), mashed with some chunks
  • Cooked turkey breast slices (6-8 slices), deli-style or leftover, low-sodium preferred
  • Fresh lemon juice (1 tablespoon)
  • Salt (to taste)
  • Fresh baby spinach or mixed greens (about 1 cup)
  • Optional add-ins: thinly sliced red onion or cucumber, crumbled feta or shredded cheese, black pepper or chili flakes

Instructions

  1. Mash the avocado in a medium bowl with a fork until mostly smooth but still a little chunky (2-3 minutes). Add fresh lemon juice and salt, then stir to combine.
  2. Lay one tortilla flat on a clean surface or cutting board. Warm slightly in the microwave for 10 seconds if stiff.
  3. Spread a thin, even layer of the smashed avocado over the tortilla, leaving about a half-inch border at the edges (1-2 minutes).
  4. Arrange turkey breast slices evenly over the avocado layer, overlapping slightly to cover the tortilla.
  5. Scatter baby spinach or mixed greens on top of the turkey. Add optional sliced cucumber, red onion, or cheese if desired.
  6. Roll the tortilla tightly into a log shape, pressing gently but firmly to keep everything snug (about 1 minute). Trim ends if needed.
  7. Slice the roll crosswise into 1-inch thick pinwheels using a sharp serrated knife. Expect about 6-8 pinwheels per tortilla.
  8. Wrap pinwheels tightly in plastic wrap or place in an airtight container if packing for later, or serve immediately.

Notes

Use fresh lemon juice to prevent avocado browning. Warm tortillas briefly to make rolling easier. Do not overload tortillas to avoid tearing. Prepare pinwheels up to 24 hours ahead and store wrapped tightly in the refrigerator. For a dairy-free version, omit cheese or use plant-based alternatives.
