Ingredients

Scale
  • 1 pound ground beef (80/20 works best)
  • 1 packet taco seasoning (e.g., Old El Paso or McCormick)
  • 1/3 cup water
  • 16 ounces cream cheese, softened (two 8-ounce blocks)
  • 1 cup sour cream (full-fat recommended)
  • 2 cups shredded Mexican blend cheese (or cheddar jack)
  • 1 cup shredded lettuce (iceberg or romaine, finely chopped)
  • 1 medium tomato, diced (seeds removed)
  • 1/4 cup sliced black olives
  • 1/4 cup sliced green onions (both white and green parts)
  • 1/4 cup salsa (mild or medium, drained)
  • 1/2 cup sour cream (extra, for piping the web)
  • 1/4 teaspoon paprika (optional, for color)
  • 8–10 whole black olives (for making spiders)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Brown the ground beef in a large skillet over medium-high heat for 6-8 minutes, breaking it apart. Drain excess fat, leaving about 1 tablespoon. Add taco seasoning and water, stir, and simmer for 2-3 minutes until thickened. Set aside to cool slightly.
  3. In a large mixing bowl, combine softened cream cheese and 1 cup sour cream. Beat with a hand mixer on medium speed for 2-3 minutes until smooth and fluffy.
  4. Spread the cream cheese mixture evenly across the bottom of a 9×13-inch baking dish, about 1/2-inch thick, reaching the edges.
  5. Spoon the seasoned ground beef over the cream cheese base and spread evenly, pressing down gently.
  6. Sprinkle shredded Mexican blend cheese evenly over the meat layer.
  7. Bake for 12-15 minutes, or until the cheese is melted and bubbly around the edges.
  8. Remove from oven and let rest for 2-3 minutes. Sprinkle shredded lettuce, diced tomatoes, sliced black olives, and green onions over the hot cheese layer. Spoon salsa in small dollops across the top.
  9. In a small bowl, mix the extra 1/2 cup sour cream with paprika if using. Transfer to a piping bag or zip-top bag with a tiny corner snipped off. Pipe a small circle in the center, then concentric circles around it, spacing them about 1 inch apart. Using a toothpick or knife, drag lines from the center outward through all circles to create a web effect. Wipe the toothpick clean between each drag.
  10. Slice whole black olives in half lengthwise. For each spider, use one olive half as the body. Cut the other half into thin strips for legs (8 legs per spider). Arrange spiders on the web, pressing legs gently into the sour cream.
  11. Serve immediately with sturdy tortilla chips (scoop-style recommended).

Notes

Use room temperature cream cheese for a smooth base. Drain the ground beef well to avoid greasy dip. Do not overbake the cheese; remove when melted and bubbly. For make-ahead, assemble through step 6, cover, and refrigerate up to 24 hours; bake for 15-18 minutes before adding toppings and spiderweb.
