A magical green punch inspired by a New Orleans cafe, featuring lime sherbet, pineapple juice, and ginger ale for a creamy, fizzy, tropical Halloween treat that comes together in under 10 minutes.

Ingredients

Scale
  • 1 quart lime sherbet (recommended: Tillamook)
  • 4 cups pineapple juice, chilled (100% juice, no added sugar; recommended: Dole or Lakewood)
  • 3 cups ginger ale, chilled (recommended: Canada Dry or Schweppes)
  • 2 cups lemon-lime soda, chilled (such as Sprite or 7-Up)
  • 3–4 drops green gel food coloring (optional, for more intense color)
  • For garnish: sliced limes, green gummy worms, frozen green grapes, or dry ice (handle carefully)

Instructions

  1. Chill all ingredients (pineapple juice, ginger ale, lemon-lime soda) in the refrigerator for at least 2 hours before serving. Keep sherbet in the freezer until ready to use.
  2. Set up your punch bowl on the serving table. If using dry ice for a spooky fog effect, place a small chunk in the bottom of the bowl with thick gloves on before adding anything else.
  3. Pour 4 cups of chilled pineapple juice into the punch bowl as the base.
  4. Slowly pour in 3 cups of chilled ginger ale down the side of the bowl to preserve carbonation.
  5. Gently pour in 2 cups of chilled lemon-lime soda down the side of the bowl. Stir very gently with a large spoon or ladle.
  6. If desired, add 3-4 drops of green gel food coloring and stir gently for a more intense green color.
  7. Scoop the entire quart of lime sherbet into the punch bowl in large dollops. Do not stir it in completely; let it float and melt slowly for a creamy texture.
  8. Add garnishes such as sliced limes, green gummy worms, or frozen green grapes. If using dry ice, add a small piece now for spooky vapor.
  9. Serve immediately by ladling into cups, ensuring each serving gets some melted sherbet. Best enjoyed within the first 30 minutes.

Notes

Do not stir the sherbet completely into the punch; let it float and melt slowly for the best texture. Add sherbet just before guests arrive for the most dramatic presentation. For an alcoholic version, add 1-2 cups of coconut rum or vodka. For a dairy-free version, substitute lime sorbet. Leftovers can be refrigerated for up to 24 hours but will lose carbonation. Do not reheat.
