This Easy Witch’s Brew Spiced Pumpkin Coffee Syrup isn’t complicated. It’s the kind of thing that makes you slow down for a minute, which is honestly all any of us really want from a morning cup of coffee. It tastes like the season feels—warm, slightly mysterious, and gone too soon if you don’t pay attention.

  • 1 cup water
  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 1/4 cup pumpkin puree
  • 2 tablespoons maple syrup
  • 2 cinnamon sticks
  • 1 teaspoon whole cloves
  • 1 teaspoon whole allspice berries
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Combine the liquids: In your medium saucepan, add the water, pumpkin puree, and maple syrup. Whisk them together until the pumpkin is fully incorporated.
  2. Add the sugars: Pour in the granulated sugar and brown sugar. Stir with your wooden spoon until everything is dissolved.
  3. Add the spices: Drop in the cinnamon sticks, whole cloves, and allspice berries. Sprinkle in the ground ginger and nutmeg. Give it all a good stir.
  4. Bring to a simmer: Turn the heat to medium-high and bring the mixture to a gentle simmer. This usually takes about 3-4 minutes.
  5. Simmer and infuse: Reduce the heat to low and let it bubble gently for 15 minutes. Stir occasionally to make sure nothing sticks to the bottom.
  6. Remove from heat: After 15 minutes, take the saucepan off the burner. Stir in the vanilla extract and the pinch of salt. Let it sit for 5 minutes to cool slightly.
  7. Strain the syrup: Place your fine-mesh strainer over a bowl or directly over your jar. Carefully pour the syrup through the strainer to catch all the whole spices and any pumpkin bits. Use the back of a spoon to press down on the solids.
  8. Cool and store: Let the syrup cool completely in the jar before sealing it. It will thicken more as it cools. Once it’s room temperature, pop the lid on and refrigerate.

Notes

If using ground spices instead of whole, reduce amounts by about half. Syrup will keep for up to 3 weeks in the refrigerator. If crystallization occurs, warm the jar in a bowl of hot water and shake. For a low-sugar option, reduce sugar to 3/4 cup total and add an extra tablespoon of maple syrup.
