A quick and simple baked cod recipe featuring a bright lemon herb marinade that keeps the fish tender, flaky, and full of fresh flavor. Perfect for busy weeknights and light dinners.

Ingredients

Scale
  • 4 fresh cod fillets (6 ounces each)
  • 3 tablespoons fresh lemon juice (from 1 large lemon)
  • Lemon zest from 1 large lemon
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, chopped (optional)
  • 2 garlic cloves, minced
  • 2 tablespoons extra virgin olive oil
  • Sea salt, to taste
  • Freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, whisk together lemon juice, lemon zest, olive oil, minced garlic, chopped parsley, dill, sea salt, black pepper, and red pepper flakes if using.
  3. Pat the cod fillets dry with paper towels to remove excess moisture.
  4. Arrange the fillets in a baking dish, leaving space between each piece.
  5. Brush or spoon the lemon herb marinade generously over each fillet. Let rest for 5-10 minutes if possible.
  6. Bake uncovered for 12-15 minutes, until the fish flakes easily with a fork and is opaque throughout.
  7. Optional: Broil for the last 1-2 minutes for a slightly caramelized top, watching closely to avoid burning.
  8. Remove from oven and let rest for a couple of minutes before serving.

Notes

Do not overcook the cod to keep it moist and flaky. Patting the fish dry before marinating helps the marinade stick and prevents sogginess. Fresh herbs significantly enhance flavor. Marinate briefly for best results. Use a light hand with salt and adjust seasoning after baking if needed. For even cooking, place thicker fillets in the center of the baking dish. Broil carefully to avoid burning.
