A fun and festive jello shot recipe featuring a popping candy rim that adds a playful texture and surprising burst of flavor, perfect for parties and celebrations.

  • 1 standard 3-ounce (85 g) box cherry or strawberry flavored gelatin
  • 1 cup (240 ml) boiling water
  • 1/2 cup (120 ml) cold water
  • 1/2 cup (120 ml) vodka (plain or flavored)
  • 1 small pack Pop Rocks candy (any flavor, cherry or watermelon preferred)
  • About 20 mini plastic shot cups
  • Optional: vegetable oil or non-stick spray (for rimming the cups)

Instructions

  1. Boil 1 cup (240 ml) of water. Pour into a medium bowl and add the gelatin packet. Whisk vigorously for about 2 minutes until fully dissolved and smooth.
  2. Stir in 1/2 cup (120 ml) cold water, then add 1/2 cup (120 ml) vodka. Mix gently to combine, ensuring vodka is at room temperature or cooler.
  3. Lightly moisten the rims of the mini shot cups with water or a little vegetable oil on a paper towel.
  4. Pour Pop Rocks onto a small plate or shallow dish. Dip each cup’s rim into the Pop Rocks and press gently to adhere the candy.
  5. Pour the gelatin-vodka mixture into each rimmed shot cup, filling about 3/4 full.
  6. Transfer the filled cups to the refrigerator and chill for at least 4 hours, preferably overnight, until set.
  7. Serve chilled. For freshest pop, rim the cups with Pop Rocks just before serving.

Notes

Use fresh Pop Rocks for best popping effect. Rim the cups just before serving to keep the candy crunchy. Use room temperature or cooler vodka to ensure proper gelatin setting. Let jello shots chill overnight for best texture. Optional to sprinkle extra Pop Rocks on top before serving for extra pop sensation.
