A quick and easy homemade popcorn treat coated in creamy white chocolate and topped with colorful sprinkles, perfect for celebrations and movie nights.

  • 1/2 cup (100g) popcorn kernels
  • 6 oz (170g) white chocolate chips or chopped white chocolate
  • 2 tablespoons (28g) unsalted butter
  • 1/3 cup (50g) sprinkles (rainbow nonpareils or festive sprinkles)
  • Pinch of sea salt
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Heat 2 tablespoons of oil (vegetable or coconut) in a large heavy-bottomed pot over medium heat. Add 1/2 cup (100g) of popcorn kernels and cover with the lid. Shake the pot occasionally to prevent burning. Once popping slows to 2-3 seconds between pops (about 3-4 minutes), remove from heat. Pour popcorn into a large bowl, discarding any unpopped kernels.
  2. In a microwave-safe bowl, combine 6 oz (170g) white chocolate chips and 2 tablespoons (28g) unsalted butter. Microwave in 20-second intervals, stirring between each, until smooth and creamy. Alternatively, melt using a double boiler on low heat. Stir in 1 teaspoon of vanilla extract and a pinch of sea salt.
  3. Pour the melted white chocolate mixture over the popcorn in batches, gently folding with a silicone spatula to coat evenly without breaking the popcorn. Work quickly before the chocolate sets.
  4. Immediately scatter 1/3 cup (50g) of colorful sprinkles over the popcorn and gently toss again to distribute. The warmth will help the sprinkles stick nicely.
  5. Spread the coated popcorn evenly on a parchment-lined baking sheet. Let it cool at room temperature for about 30 minutes or until the chocolate hardens. You can speed this up by placing it in the fridge for 10-15 minutes.
  6. Once set, break into clusters or serve as is. Store any leftovers in an airtight container at room temperature for up to three days.

Notes

Use quality white chocolate to avoid graininess. Work quickly when coating popcorn as white chocolate sets fast. Coat popcorn in smaller batches for better coverage. Keep popcorn dry to avoid sogginess. If white chocolate thickens, gently warm again in short bursts. Store leftovers in an airtight container at room temperature for up to 3 days. Refrigeration may cause chocolate bloom.
